That came to an end in 2015 when Julien Launois and his wife Sarah took over the estate from his father, and they shocked the village by immediately canceling the contract with the co-op. The base wine of co-fermented Chardonnay and Pinot Noir from all the greatest villages in the region is aged then bottled into magnums for secondary fermentation and aging. This format was a natural choice as it helps the wine age and the aromas to come into their own.
