'Of Chalk and Cold Sun'
With 6.5 acres of Grand Cru vineyard in the coveted village of Mesnil-sur-Oger, Launois has the most valuable and sought after terroir in all of Champagne. The domaine goes back several generations, but the grapes were historically always sold to the Le Mesnil cooperative. That came to an end in 2015 when Julien Launois and his wife Sarah took over the estate from his father, and they shocked the village by immediately canceling the contract with the co-op. They named the domaine Paul Launois after their young son, and burst onto the world scene with the revolutionary concept of producing single-barrel Champagne.
Julien and Sarah's handmade cuveés are as delightful as they are rare. They believe that Champagne is a product of luxury and quality, but also a vector of contacts and openness to the world.

Julien works his vines with total respect for the environment.
No chemical input has been applied to the vines for many years, where they naturally grass in winter, and in summer, the soil is ploughed.
Blanc de Blancs is Champagne made exclusively from white grapes—in this case, Chardonnay. It tends to be more delicate, mineral, and age-worthy than Champagnes that include Pinot Noir or Meunier.
Grand Cru is the highest classification in Champagne, awarded to just 17 villages. Paul Launois sources all their fruit from Le Mesnil-sur-Oger, one of the most prestigious Grand Cru villages in the appellation.
Single-barrel (or single-cask) Champagne is produced from the contents of just one barrel—an incredibly small, individual expression of a single harvest, parcel, or variety. Paul Launois is one of very few houses to produce Champagne in this format.

Serve well chilled at 8–10°C. Store horizontally in a cool, dark environment. Given the quality of the terroir, these Champagnes can also be aged for several years if stored correctly.
The minerality and precision of Le Mesnil Blanc de Blancs pairs beautifully with oysters, sushi, ceviche, goat's cheese, and delicate seafood dishes.
